peking duck is dead and has air pumped between it’s meat and skin with a bicycle pump so it gets extra crispy during the cooking process.

The duck is likely a Peking Duck. Furthermore it’s not quite full grown because it still has a little bit of down on it’s neck. The neck looks long and slim when compared to the body because it’s only a few months old. If it were a goose it would have a much longer neck and much larger body.
